Vegan Chocolate Mousse

    Vegan Chocolate Mousse If you love desserts, and especially chocolate, try this and give it to your non-vegan friends and don't tell them until they have eaten it, and asked for more. Chocolate everywhere, but most of it not vegan, so what do you do? First of all vegan chocolate buttons exist, you just have to look a little. Here in Tasmania, we have Unpacked bulk whole foods in Kingston, who specialize in lots of hard to find organic and local produce, they also have vegan choc buttons. Have a go at this recipe it involves 3-4 ingredients and a bit of patience while you wait for it to chill.

    • 1 Can Water from chickpeas (aqua faba)
    • 1/2 Cup Vegan chocolate buttons. The ones I use have sugar added, and this is all the sweetener I use. Otherwise add caster or fine ground sugar to taste
    • 1 Pinch Powdered chili to taste
    • 3 Medium Glasses for serving
    • Garnish with chopped nuts and cranberries


    1. Drain the water from the chickpeas into a food processor bowl or bowl large enough to whisk in. Beat until firm peaks appear. This can take some time, so a mechanized system works best for me.
    2. Melt the chocolate buttons in a double pan ie one bowl suspended over a saucepan of simmering water
    3. Gradually add the chocolate to the chickpea meringue, gently folding until both ingredients are combined. *If you wish to add the spice of chili, this is the moment you include and combine it.
    4. Spoon the mixture into medium size glasses (they look good in the presentation) and place in the refrigerator for a minimum of 2 hours to set.
    5. Only remove from the refrigerator when you are ready to eat.
