Tasty Pumpkin Soup

    Delicious and hearty Pumpkin Soup, perfect for cold winter nights.

    • 1 Butternut Pumpkin
    • 2 Potatoes
    • 1 Onion
    • 200g Bacon (diced)
    • 1 clove of Garlic
    • Grated Cheese (to serve)
    • Sour Cream (to serve)
    • Freshly Buttered Bread


    1. Peel and cube pumpkin, potatoes and onion.
    2. Bring vegetables to boil in a large pot with just enough water to cover, simmer until cooked through.
    3. Allow to cool and pour vegetables and water into a blender, blend to desired consistency.
    4. Return blended vegetables to the pot and place on a low heat.
    5. Fry bacon and garlic until crispy and drain off excess oil.
    6. Add bacon and garlic to the blended vegetables and allow to simmer for 5-10 minutes, stirring regularly.
    7. Serve with a dollop of sour cream, a little grated cheese, and freshly buttered bread.
    8. Enjoy!


    If you find the soup isn't thick enough for your liking, add a little grated potato at Step 6 and cook through. Repeat this step until the desired consistency is reached.
