Bring vegetables to boil in a large pot with just enough water to cover, simmer until cooked through.
Allow to cool and pour vegetables and water into a blender, blend to desired consistency.
Return blended vegetables to the pot and place on a low heat.
Fry bacon and garlic until crispy and drain off excess oil.
Add bacon and garlic to the blended vegetables and allow to simmer for 5-10 minutes, stirring regularly.
Serve with a dollop of sour cream, a little grated cheese, and freshly buttered bread.

Tip
If you find the soup isn't thick enough for your liking, add a little grated potato at Step 6 and cook through. Repeat this step until the desired consistency is reached.
