French Vanilla Custard

    For years I used custard powder... but one day I tried to make custard myself. It's really easy to make and with this recipe, no lumps and no worries!

    Serves: 4 

    • 2 cups (500 ml) milk
    • 1/2 vanilla pod, cut in half lengthways
    • 3/4 cup (165 g) caster sugar
    • 4 eggs
    • 4 tablespoons plain flour

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Combine milk and vanilla pod in a medium saucepan and bring to the boil over medium heat.
    2. Meanwhile, beat sugar with eggs in a bowl until mixture is creamy and a very pale yellow colour. Stir in flour; remove vanilla pod from saucepan and gradually add boiling milk to egg mixture, mixing well.
    3. Pour mixture into saucepan and cook over very low heat, stirring occasionally, until custard is thickened and ready.
