This lovely mascarpone icing is incredibly versatile and can be used to decorate a variety of different cakes.
I've used Marscapone cheese in the past as a dip for toasted cinnamon tortilla chips by adding sugar and a little vanilla and it was awesome. I guess I was expecting the same. I found it to be bland and tasting too much like unsweetened whipped cream. I added extra sugar, cream of tartar and vanilla and it helped a little but it wasn't what I was looking for.
