Creamy Mascarpone Icing

    This lovely mascarpone icing is incredibly versatile and can be used to decorate a variety of different cakes.

    • 100g mascarpone cheese
    • 225ml thickened cream
    • 1 to 2 teaspoons vanilla extract
    • 2 tablespoons caster sugar

    1. Place the mascarpone, cream and vanilla extract in a bowl and mix with a handheld whisk. Add the sugar gradually until fully mixed and smooth. Continue to mix for a further 5 minutes or until stiff peaks form. Use or cover and store in the fridge until needed.

    Simple enough. I did add 1/4 teaspoon of cream of tartar just to make it would be stable enough to sit out in the warm weather.  -  11 Nov 2017  (Review from Allrecipes USA and Canada)
