Gluten Free Jam Drops


    This recipe is simple and quick, and is gluten free!

    • 125g butter, softened
    • 1/2 cup caster sugar
    • 1 tsp vanilla essence
    • 1 extra large egg
    • 1 1/4 cups gluten self-raising flour
    • 1/3 cup strawberry jam


    1. Preheat oven to 180 degrees celcius. Line 2 baking trays with non-stick paper.
    2. Use an electric beater to beat the butter, sugar and vanilla in a medium bowl until pale and creamy. Add the egg and beat until combined. Stir flour in until combined.
    3. Use lightly floured hands to roll teaspoons of mixture into balls. Place on the trays, about 5cm apart. Use a lightly floured finger to make indents in the centre of the balls. Spoon 1/2 a teaspoon of jam into the indents of the balls.
    4. bake in the oven for 15 minutes, or until light golden. Remove biscuits from oven. Set aside to cool.


    You can use any jam in these biscuits. They may seem a bit soft when you take them out of the oven, but as the cool, they become more firm.

    this recipe was yum, but the look was revolting. truth - they were actually really good look at the rating for proof, they just looked a bit flopped  -  07 May 2017
