Sauteed Onion and Bell Peppers

Simple recipe for delicious sautéed onion and peppers. Great as a side, filler for tacos, or as a vegetarian meal.

    1 person made this

    • 1 Brown onion
    • 1/4 cup olive oil
    • 1/2 red bell pepper
    • 1/2 yellow bell pepper
    • 1/2 green bell pepper
    • 1/4 cup red wine vinegar
    • 1 tablespoon tomato puree
    • 1/2 teaspoon red chilli flakes
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 2 cloves garlic, minced
    • Hot sauce to taste

    1. Cut the onions in quarters, then slice them thinly. Julienne the peppers.
    2. Heat olive oil in pan. Once hot add onion and sauté until brown (about 5 minutes).
    3. Combine vinegar, tomato puree, chilli, salt, pepper, garlic, and hot sauce and mix well.
    4. Add bell peppers and sauce to pan and sauté for another 10 minutes, then serve.

I typically add about a tablespoon of hot sauce for a decent kick, however original recipe didn't have any.
