Peckish Pandas Tomato Rice
I met a friend's Portuguese mother on this day for the first time. We were starting to prepare dinner together. I asked her, if I could film her cooking this dish and to provide the instructions. My youtube cooking channel, is a real life take on people cooking delicious food. Type in 'Peckish Pandas Tomato Rice'. Ingredients
- 4 cups of medium grain rice
- 2 sliced onions
- 4 sliced garlic cloves
- 1 sliced red capsicum
- 1 sliced carrot
- 1 tin of tomatoes
- salt and pepper to taste
- olive oil
Directions
Cook the rice according to the directions.
Add sliced onion and garlic to a frying pan.- Add some olive oil to brown the onion and garlic.
- Sprinkle with salt and pepper according to taste.
- Then add the sliced capsicum and carrot, cook until 'al dente'.
- Add the tin of tomatoes, crushing the whole tomatoes.
Add the rice a bit at a time, using the back of a fork to mix into the other ingredients.- Season to taste.
