Salmon, Cucumber and Avocado Salad

    This salmon and avocado salad with cucumber, capers and lemon juice is a nice and simple lunch or easy starter.

    Serves: 2 

    • 1/2 avocado, thinly sliced
    • 1/4 cucumber, thinly sliced
    • 1 dash lemon juice
    • sea salt to taste
    • 1 pinch dill, or more to taste
    • 200g tinned salmon, drained and flaked
    • 1 teaspoon mayo or creamy salad dressing
    • 2 teaspoons capers

    1. Layer avocado and cucumber on a serving plate; top with lemon juice, salt and dill.
    2. Mix salmon and salad dressing together in a bowl; spoon over avocado and cucumber. Sprinkle capers over salmon mixture.


    Cooked fresh salmon can be substituted for tinned salmon.

    I consider any recipe that calls for all ingredients you can buy at Aldi or similar discount grocery store a good one! I omitted the cuke and capers and subbed evoo and vinegar for the Miracle Whip. I cooked frozen salmon, let cool and added feta. I mixed it all up with fresh spinach leaves and added a glass of wine.
