Flour-less, Dairy-free, Banana Pancakes

    These pancakes will really brighten up your morning, without extending your waistline.

    • 2 medium, Bananas (ripened)
    • 2 Eggs (whole)
    • 1/2 teaspoon Vanilla Extract
    • 1/2 teaspoon Cinnamon


    1. Using a fork, mush up bananas in a bowl.
    2. Add eggs, cinnamon and vanilla extract, and mix thoroughly.
    3. Grease a frying pan with a non-stick spray, or butter, and place over low heat.
    4. Using a 1/2 cup, scoop a portion of the mixture into the frying pan.
    5. When underside of pancake is golden brown, flip to brown other side.


    These pancakes have a texture a lot like french toast. To get a more fluffy, airy pancake, add 1/2 cup of quick oats.
