Banana Muffins

    • 180g Unsalted Butter
    • 1 Cup Brown Sugar
    • 3 Tbsp golden syrup
    • 2 Eggs
    • 1/3 Cup canola or vegetable oil
    • 4 over ripe bananas (mashed)
    • 3 tsp Vanilla Essence
    • 3 tsp mixed spice
    • 3 cups Plain flour
    • 4 tsp baking powder
    • 1 tsp baking soda
    • 2 Tbsp milk (preferably full cream)


    1. Pre Heat oven to 175 deg C
    2. Grease muffin tins with canola spray
    3. Using electric mixer, beat the brown sugar, golden syrup and butter until light.
    4. Add vanilla and egg, beat until smooth.
    5. Using a wooden spoon, add oil and banana and mix well. You will notice it will look like its starting to separate, don't worry that's normal.
    6. In a separate bowl, sift all dry ingredients then add to wet mixture. Mix until combine. Mix dry ingredients to wet ingredients and mix until well combine.
    7. Add milk and mix well. Once mixture is well combine, add to your muffin tray filling it only half way up. (You don't want it to rise too much over the rim)
    8. Place in the oven for roughly 20-25 mins or until golden brown on the top. Turn half way.
    9. Once cooked, leave it cool roughly 10 mins in the muffin tray then turn over onto cooling rack. Let cook for another 10 mins then enjoy warm with a dollop of ice cream if desired.


    If you find that the muffin is too moist after baking, if you make next time, don't add the oil.
