Lemon-Coconut Cookies

    • 1 teaspoon of vanilla extract
    • 3/4 cups of brown sugar
    • 180 grams of unsalted butter, slightly melted
    • 2 eggs
    • 2 cups of plain flour
    • I teaspoon of baking powder
    • 1/2 a cup of desiccated coconut
    • 1 lemon
    • 1/3 of a cup of caster sugar


    1. Preheat oven to 180 degrees fan force
    2. Add caster sugar, brown sugar, butter and vanilla extract into a bowl. Mix in till a pale brown, creamy mix
    3. Slowly add eggs to mixture.
    4. When all mixed together, add flour and baking powder to mix.
    5. When a smooth dough forms, zest about 2 tablespoons worth of lemon zest and cut the lemon in halve and juice one halve. Add the coconut.
    6. Mix all together
    7. Line a baking tray with baking paper
    8. Scoop 2 tablespoons of the mixture at a time onto the tray. Leave a 5cm gap between every cookie as they will expand in the oven
    9. Place the cookies in the oven and cookie for 12-15 minutes until golden brown.
    10. When the cookies are done in the oven, place them onto a cooling rack to let them cool down.
    11. Enjoy! :D


    Before you put the cookies on the oven, zest a bit more lemon on top of them for presentation.
