Baked Thyme and Lemon Chicken

    A tasty, easy and light dinner option.

    • 4 chicken breasts
    • 1 leek, chopped
    • 4 sprigs fresh thyme
    • 1 lemon, halved and sliced
    • Olive oil
    • Salt and pepper


    1. Place 1/4 of chopped leek onto a square of baking paper. Place 1 chicken breast on top.
    2. Sprinkle chicken breast with salt and pepper. Place 1 sprig if thyme and 2 slices of lemon on the chicken breast.
    3. Drizzle with a little olive oil then wrap the baking paper to create a parcel. Repeat with 3 remaining chicken breasts.
    4. Place chicken parcels on a baking tray and bake in a 180°C pre heated oven for 45 minutes or until chicken is cooked through.
    5. Serve with steamed beans, broccoli and asparagus with a light chicken gravy.
