Lemon, Garlic and Mustard Dressing

    This tangy lemony dressing makes a creamy addition to salads or is great drizzled over grilled fish.

    Serves: 8 

    • 80ml fresh lemon juice
    • 4 teaspoons lemon zest
    • 3 cloves garlic, minced
    • 2 teaspoons Dijon mustard
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/2 cup (125ml) olive oil
    • 115g sour cream

    Preparation:15min  ›  Extra time:15min chilling  ›  Ready in:30min 

    1. Combine lemon juice, lemon zest, garlic, Dijon mustard, salt and pepper in a bowl. Slowly whisk olive oil into the lemon juice mixture until thickened. Whisk sour cream into the mixture. Transfer the dressing to a jar or container with a tight-fitting lid.
    2. Refrigerate 15 minutes to overnight.

    I changed this recipe to make it healthier, and it was still delicious. I didn't add salt, I only used 1 tbs EVOO and I used 1/2 cup of plain non-fat regular yogurt(not greek)instead of sour cream. This cut the fat by 70% and the consistency stayed the same since regular fat-free yogurt is runnier than sour cream, thus less oil is necessary.
