Barbacoa Beef

    • 500g Skirt Steak
    • 1 brown onion
    • 1 red chile diced
    • 1 jalapeño diced
    • 2 cloves of garlic diced
    • 2 cups of chicken stock
    • 1 TBS cumin
    • 1 TBS dried coriander
    • 1 TBS dried oregano
    • Salt & pepper


    1. Season the skirt steak. Brown on all sides in a pan. Transfer to pressure cooker.
    2. With olive oil gently brown onion, garlic & all chillies on a medium heat for 5 mins. Add chicken stock then removed from heat. Allow to cool for 10 mins, then wizz up the ingredients in a blender.
    3. Cover beef with chicken stock & chile mixture, and cook ingredients in the pressure cooker for 45 mins.
    4. Release pressure & test steak is falling apart. Remove meat from stock & shred & dice. Pour some of the liquid over the meat to keep it moist.
    5. Serve with Corn chips & accompaniments or in a delicious barbacoa bowl. See my recipe.
