    Easy, quick & healthy! Serves 4

    Ingredients

    • 8 slices of toasted Rye
    • 200g of small cooked peeled prawns
    • 1 Avocado
    • 80g Sliced smoked salmon
    • 1 TBS Lemon juice
    • Rocket
    • 1 Lebanese cucumber sliced
    • 8 cherry tomatoes quartered
    • 2 TBS Mayonaise
    • 1 tsp mustard
    • 4 boiled eggs
    • 4 wedges of lemon

    Directions

    1. Mix mayo with mustard & spread over 1/2 the bread slices
    2. Mash avocado with lemon juice & spread over the other 1/2 of bread
    3. Layer smoked salmon over mayo side of bread.
    4. Spread prawns over avocado side of bread.
    5. Arrange side salad.
    6. Slice egg & plate
    7. Serve with a wedge of lemon to squeeze over at the table.
