Potato Salad with Vinaigrette
The vinaigrette dressing for this potato salad is made with beef consomme, tarragon vinegar and vegetable oil.
Ingredients

- 9 potatoes
- 1/2 cup (125ml) vegetable oil
- 4 tablespoons tarragon vinegar
- 4 tablespoons beef consomme
- 25g chopped spring onions
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper

- Bring a large pot of salted water to the boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl. Cool slightly. Peel and slice into a large bowl.
- In a small bowl, combine oil, vinegar, consomme, spring onion, parsley, salt and pepper.
- Gently toss warm potatoes with dressing. Cover and refrigerate several hours or overnight for best flavour.

This is my recipe and I feel compelled to add a few words here. When totally different herbs, spices, vinegars and oils are used rather than what I submitted, it no longer resembles the original dish and is certainly no longer French.
