Tomato-based curried sausages (serves 3-4)

    I made this last night. I used alternate ingredients to my regular recipe as i was working with leftovers. This is more tomato tban i usually make but was really well received at the dinner table

    • 2 T vegetable oil
    • 1 onion, diced
    • 3 T curry powder (I used Keens)
    • 1 T crushed garlic
    • 1tsp crushed ginger
    • 2 potato, chopped
    • 3 carrots, chopped
    • 1 stick celery, chopped
    • 1 C pasata (tomato based pasta sauce)
    • 1 C chicken stock
    • 4 plain sausages (boiled, skin removed, chopped)
    • 1 C coconut milk or cream
    • 1/2 C sultanas
    • 1/4 frozen peas
    • 1/4 frozen corn
    • Serve with rice


    1. Brown onions in oil. Add garlic and ginger.
    2. Add vegetables and curry powder and fry while stirring for 3-4 min.
    3. Add pasata and stock ( add more stock if the liquid level is too low) and sultanas. Bring to the boil then reduce heat and simmer until the vegetables are soft.
    4. Add coconut milk, chopped skinless sausage, frozen peas and corn. Cook until the sausages, peas and corn are heated through.
    5. Serve on rice


    I used powered chicken stock made up to the directions on the packet. You could use water instead of stock for a low sodium diet
