Vegan Avocado Toast

    This is a delicious, healthy, filling breakfast dish. If you prefer a vegetarian version, you can add a poached or fried egg on top.

    Serves: 4 

    • 4 slices wholemeal bread, toasted
    • 1 avocado, halved and pitted
    • 2 tablespoons freshly chopped parsley
    • 1 1/2 teaspoons extra-virgin olive oil
    • 1/2 lemon, juiced
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon onion salt
    • 1/2 teaspoon garlic granules

    1. Scoop avocado into a bowl. Add parsley, olive oil, lemon juice, salt, pepper, onion salt and garlic granules; mash together using a fork or potato masher. Spread avocado mixture on top of each piece of toast.

    I had a small avocado that needed to be used, and this fit the bill. The amounts of the ingredients added were according to my own preference. I couldn't find my parsley so I added dried cilantro; lime juice would work here if you didn't have the lemon available. It was a nice light lunch on a hot day. I can see adding an egg for protein, as some reviewers mentioned. UPDATE 8/2/17: Liked it better with lime juice, all ingredients except no parsley or cilantro, and topped with a little crushed red pepper flakes.
