    This is a very quick and simple curry to throw together but interesting due to the use of apple and sultanas.

    Ingredients
    Serves: 2 

    • 2 tablespoons butter
    • 2 chicken breast fillets, diced
    • 1 onion, sliced
    • 4 garlic cloves, finely chopped
    • 3 tablespoons curry powder
    • 1/2 apple, diced
    • 1 stalk celery, diced
    • 1/2 red capsicum, diced
    • 75g sultanas
    • 2 cups (500ml) chicken stock
    • salt, to taste

    Directions
    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat oven to 180 deg C.
    2. Melt butter in a heavy large frying pan over medium heat. Add the chicken and brown on all sides for about 7 minutes. Transfer to a plate.
    3. Add the onion and garlic to the same frying pan and sauté for about 6 minutes or until translucent. Stir in the curry powder. Return chicken to frying pan.
    4. Add the apple, celery, red capsicum, sultanas and stock. Season with salt. Cover and simmer for 10 minutes or until the sauce thickens. Serve with rice.

    A good mix of flavors. I used 1 cup chicken broth and 1 cup heavy creamy because I like a creamier sauce. My family doesn't like curry and still gave this recipe a 4. I made this because I LIKE curry, apples, and chicken.  -  08 May 2013

    ive made this about 10 times over the last few months,and all i can say is"its great!"i cook it for a little longer to reduce the sauce,but its fantastic!its also soooooo easy!if you like indian food but aren't very expierienced with cooking it,THIS is a great dish to start with! i cook lots of indian food,and this honestly stands up there with some of the tastiest,and most complex dishes i cook! top notch nosh!  -  13 Jul 2012  (Review from Allrecipes UK & Ireland)
