Chicken Fajitas

    Make a baking tray full of fajitas for a crowd with this easy and flavourful recipe combining chicken, capsicums, onion, and a mix of seasonings.

    Ingredients
    Serves: 8 

    • 1/3 cup vegetable oil
    • 2 teaspoons chilli powder
    • 1 teaspoon dried oregano
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1 pinch ground cayenne pepper
    • 680g chicken tenders, quartered
    • 4 cups sliced capsicums, any color
    • 1 onion, sliced
    • 1/4 cup chopped fresh coriander
    • 1/2 lime, juiced

    1. Combine vegetable oil, chilli powder, oregano, garlic, onion, cumin, salt, pepper, and cayenne pepper in a large resealable plastic bag. Add chicken tenders, capsicums, and onion; shake to mix.
    2. Marinate chicken mixture in the refrigerator, 30 minutes to 2 hours.
    3. Preheat oven to 200 degrees C. Line a rimmed baking tray with aluminum foil.
    4. Spread chicken mixture onto prepared tray.
    5. Roast in the preheated oven, stirring halfway through, until chicken is no longer pink and capsicums soften, 15 to 20 minutes.
    6. Sprinkle coriander and pour lime juice over chicken mixture; toss to distribute.

    Cook's Notes:

    Use a variety of capsicums and spicy peppers as desired.

    Made the recipe as is and marinated for 2 hours. This was lacking in seasoning for us. Will make the recipe again, but will double the amount of the dry seasonings and I think it will be perfect for our tastes.     This was a great recipe, however I did make some minor changes. I used olive oil in place of what was suggested, used 1 packet of Taco Bell original taco seasoning and 1 packet of Taco Bell mild seasoning in place of the spices suggested, added about a teaspoonful of minced garlic, cayenne pepper, oregano, onion powder w/parsley and concentrated lemon juice to the marinade mixture and served with taco rice and re fried beans. The hubby and I loved it and will be adding it to our weekly recipes. Thank you for a great recipe!
