Tomato and Mushroom Flan

    The flan makes for a rustic lunch or light supper with a mixed garden salad. Chopped fresh herbs would make a lovely addition, and non-vegetarians can add some bacon to the flan, if they like.

    Ingredients
    Makes: 1 flan

    • 1 (20 to 23cm) baked flan case
    • 3 tomatoes, chopped and seeded
    • 6 large mushrooms, chopped
    • 2 eggs
    • 3 tablespoons thickened cream
    • salt and pepper, to taste
    • 75g grated Cheddar cheese

    1. Preheat oven to 190 degrees C.
    2. Combine tomatoes and mushrooms with beaten eggs and cream. Season and pour into flan case, scattering cheese on top.
    3. Bake in preheated oven for 15 to 20 minutes.
