Grapes are pickled in a sweet and savoury brine. They make a lovely addition to a cheese platter.

    Serves: 10

    • 450g seedless red grapes
    • 350ml apple cider vinegar
    • 250ml water
    • 200g raw sugar
    • 1/2 red onion, cut into slivers
    • 2 teaspoons yellow mustard seeds
    • 1 teaspoon whole black peppercorns
    • 1 cinnamon stick
    • 1 bay leaf
    • 1 star anise pod
    • 1 whole allspice

    1. Remove stems and discard any grapes that aren't firm and unblemished. Place grapes in a 1 litre jar and set aside.
    2. Combine vinegar, water, sugar, red onion, mustard seeds, peppercorns, cinnamon stick, bay leaf, star anise pod and allspice in a saucepan then bring to the boil.
    3. Reduce heat to low and simmer until onion has softened, about 10 minutes. Remove saucepan from heat and cool for 15 minutes.
    4. Carefully pour cooled liquid over grapes and gently swirl jar to incorporate spices. Cover jar and refrigerate for 1 day before eating.

Interesting flavor; I think it will be better after more time. After one day they didn't seem "pickled through". Also, I had too much liquid by about a cup. Next time, I will use more onions: they are my favorite part!  -  28 Jul 2015  (Review from Allrecipes USA and Canada)
