Spaghetti with Bacon and Pine Nuts

    This is a super easy pasta but very flavourful, combining bacon and pine nuts with tarragon and lemon juice.

    Serves: 2 

    • olive oil
    • 300g bacon rashers, sliced into 5cm strips
    • 125g pine nuts
    • 175g spaghetti
    • 50g Cheddar cheese, grated
    • sea salt and freshly ground black pepper to taste
    • 2 teaspoons fresh tarragon or thyme
    • 1 lemon, halved

    1. Preheat oven to 220 degrees C. Place the bacon in a baking tray with oil and cook in the preheated oven for 30 minutes.
    2. Meanwhile, cook spaghetti according to package instructions.
    3. During the last ten minutes of cooking the bacon, take tray out of the oven and sprinkle pine nuts over the bacon slices. Put the tray back to oven for the remaining 10 minutes.
    4. When bacon is browned and crisp, take the tray out of the oven, add the drained spaghetti to the tray and toss thoroughly. Add the cheese and season with sea salt and black pepper. To serve, sprinkle with the tarragon and lemon juice.
