Mushroom Beef Burgers

    Low fat home-made burgers extended with mushrooms for extra taste and fibre. You can grill them instead of frying or - of course - cook them on the barby. A really good way to get fussy kids to eat well! Serves as burgers or as rissoles with veges.

    Serves: 6 

    • 1 small onion, chopped
    • 150g mushrooms
    • 450g lean mince
    • 50g fresh wholemeal breadcrumbs
    • 1 tablespoon dried mixed herbs
    • 1 tablespoon tomato purée
    • salt and freshly ground black pepper to taste
    • flour, for shaping

    1. Place onion and mushrooms in a food processor and process until finely chopped. Add mince, breadcrumbs, herbs, tomato purée and salt and pepper to taste. Process for a few seconds, until mixture binds together but still has some texture.
    2. Press handfuls of the mince mixture into patties using lightly floured hands.
    3. Using a large frying pan, cook the burgers for 12 to 15 minutes, turning once, until evenly cooked.

    Mmmm.... Lush!!! Such a gorgeous recipe, worked well halved, although our mix was a bit moist, it tasted delicious! The mushrooms really stretch the meat and give a wonderful flavour.
