Chia and Fruit Overnight Oats

    Chia seeds, oats and fruit soak overnight in almond milk for a nutritious and filling vegan breakfast.

    Serves: 2 

    • 2 ripe bananas, mashed
    • 100g rolled oats
    • 4 tablespoons chia seeds
    • 1/2 teaspoon ground cinnamon
    • 315ml almond milk
    • 160ml water
    • To serve
    • 1 handful blueberries
    • 1 handful blackberries
    • 1 nectarine, peeled and diced

    1. Stir together banana, oats, chia seeds, cinnamon, almond milk and water in a jar or airtight container. Cover and chill in the fridge overnight.
    2. Place oat mixture in a saucepan and cook over gentle heat for 5 minutes. Divide between two bowls and top with blueberries, blackberries and nectarine.
