Pizza Chicken

    Kick the flavor of ordinary breaded chicken breasts into a higher gear by topping them with pizza sauce, mozzarella cheese and pepperoni.

    • 1/2 cup Italian-seasoned bread crumbs
    • 1/4 cup grated Parmesan cheese
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    • 1/2 cup plain flour
    • 1 egg
    • 1 tablespoon lemon juice
    • 2 skinless, boneless chicken breast
    • 1/2 cup pizza sauce, divided
    • 1/2 cup shredded mozzarella cheese, divided
    • 4 slices pepperoni, or to taste - divided

    1. Preheat oven to 200 degrees C.
    2. Combine bread crumbs, Parmesan cheese, salt and black pepper in a shallow bowl then place flour into a second bowl. Whisk egg and lemon juice together in a third bowl.
    3. Dip each chicken breast in egg mixture and dredge in flour then dip again in egg mixture and dredge chicken in crumb mixture until coated. Place coated chicken breasts into a baking dish.
    4. Bake in the preheated oven until chicken is heated through and crumbs are golden, about 20 minutes.
    5. Spoon 2 tablespoons pizza sauce onto each chicken breast, sprinkle each with half the mozzarella cheese, and top each with half the pepperoni slices.
    6. Bake until chicken is no longer pink inside and the juices run clear, about 10 more minutes. An instant-read meat thermometer inserted into the thickest part of a breast should read at least 70 degrees C.

    I doubled this recipe. I used homemade bread crumbs (that I added italian seasoning to) and made the pizza sauce from scratch. I also added italian seasoning, garlic powder and onion powder to the flour. I served this with garlic-broccoli pasta. NO leftovers.     I was surprised at how good this tuned out. I was looking for a different way to make chicken and am so glad I came across this recipe. The chicken is so tender. The breading adds a lot of flavor that reminded me of pizza crust and its texture has a little crunch to it. Then with the sauce, pepperoni and cheese added on, it just got better with each layer.
