Lemon Cream Cheese Scrolls

    These delicious scrolls are filled with lemon flavoured cream cheese, and just in case they're not lemony enough, I've added lemon curd as well. Top it all off with lemon drizzle and you have a scroll that is yummy warm or cold. Try them warm with butter.

    Makes: 12 scrolls

    • 250g cream cheese
    • 1 cup sugar
    • 2 lemons, zested
    • 3 1/2 cups self raising flour
    • 1 cup lemonade
    • 1 cup thickened cream
    • pinch salt
    • 4 tablespoons lemon curd
    • Icing
    • 1 cup icing sugar
    • 1 teaspoon butter, soft
    • lemon juice

    1. Scroll: Preheat oven to 190 degrees C. Line a baking tray with baking paper.
    2. In a small bowl mix the cream cheese, sugar and lemon zest together until well combined. Put aside.
    3. In a medium sized bowl mix the flour, lemonade, cream and salt together to form a dough.
    4. Tip dough onto a well floured board and knead until smooth. Incorporate more flour as needed.
    5. Roll the dough out to approx 40 x 28cm rectangle.
    6. Spread the cream cheese mixture all over the top of the dough. Spread the lemon curd all over the top of the cream cheese.
    7. Starting on the long edge, roll the dough up like a swiss roll. Cut roll into 12 even pieces and place on tray.
    8. Cook in the preheated oven for 25 -30 until golden brown. Cool on tray.
    9. Icing: Mix the icing sugar and butter together with enough lemon juice to make a drizzly icing.
    10. Ice the scrolls before serving.
