Dulce de Leche Grilled Cheese Sandwiches

    An easy and sweet variation of a grilled cheese sandwich combines cream cheese sweetened with dulce de leche (milk caramel spread) and apples, grilled on cinnamon raisin bread. Have it for breakfast, tote it for your lunch, or give it to your kids when you need a quick meal or snack.

    Ingredients
    Serves: 2 

    • 1/4 cup cream cheese, softened
    • 1 tablespoon dulce de leche
    • 1/2 teaspoon ground cinnamon
    • 4 slices cinnamon-raisin bread
    • 1 small apple, peeled, cored and thinly sliced

    Directions

    1. In a bowl, mix the cream cheese, dulce de leche and cinnamon until thoroughly combined.
    2. Spread 2 slices of bread with the mixture, half on each slice. Divide the apple slices in half, then arrange the slices on top of the cream cheese topping. Top with remaining bread slices to make 2 sandwiches.
    3. Spray a large non-stick skillet with cooking spray, and place over medium heat. Pan fry the sandwiches until toasted and golden brown on each side, about 3 minutes per side.

    I used reduced fat whipped cream cheese an organic Granny Smith apple for this sandwich. Instead of using an aluminum non-stick skillet, I used my cast iron skillet. I heated the skillet, added a pat of butter and fried away. To say that my kids liked this would be an understatement.     Oh my, this is scrumptious. Had this for breakfast today with fruit salad. We probably would have been satisified with half a sandwich (rather than a whole) because it is so rich and decadent. The apple lends a nice crunch to this sweet and wonderful combination of ingredients. Don't change a thing on this, and do use the cinnamon-raisin bread as I think it's important.
