Jalapeno Popper Chicken

    36 minutes

Everything you love about jalapeno poppers - the cheese, the peppery heat, and the crispy coating - combine with chicken breasts to make a satisfying meal out of a favourite entree.

    3 people made this

    Serves: 4

    • 1 (225g) package cream cheese, softened
    • 1/2 cup grated Cheddar cheese
    • 2 jalapeno chillies, seeded and minced
    • 4 skinless, boneless chicken breasts
    • 1 cup seasoned bread crumbs
    • 1/4 cup vegetable oil

    Preparation:20min  ›  Cook:16min  ›  Ready in:36min

    1. Stir together the cream cheese, Cheddar cheese and jalapenos in a small bowl.
    2. Cut a pocket horizontally through the thickest side of each chicken breast, and fill with 1/4 of the cheese mixture. Secure with toothpicks.
    3. Roll the chicken breasts in bread crumbs to coat. Heat the oil in a frying pan over medium-high heat, and cook chicken breasts until no longer pink in the center and the juices run clear, about 8 minutes per side. An instant-read thermometer inserted into the center should read at least 74 degrees C.

    Just like in American-Mexican restaurants!  -  10 Nov 2016

I mad this and my wife thoroughly enjoyed it and I did as well. Delicious. Will definitely assemble it again  -  23 Jul 2018  (Review from Allrecipes USA and Canada)

The filling itself was DELICIOUS. I saved myself some time and just dumped a whole jalapeno (stem removed) into the food processor with the cheeses rather than mincing it. The final product was just ok with the chicken- not worth repeating for our family.  -  16 Jan 2018  (Review from Allrecipes USA and Canada)
