Lemon, Feta and Quinoa Salad

    Feta cheese, olives, and tomatoes are tossed with quinoa in a lemon vinaigrette in this easy Greek-inspired salad.

    Serves: 6 

    • 2 cups water
    • 1 cup quinoa
    • 1/2 teaspoon sea salt
    • 2/3 cup halved grape tomatoes
    • 1/2 cup crumbled feta cheese
    • 1/4 cup roasted unsalted sunflower seeds
    • 1/4 cup chopped fresh parsley
    • 65g sliced black olives
    • 1 tablespoon minced shallot
    • Dressing
    • 3 tablespoons extra virgin olive oil
    • 3 tablespoons lemon juice
    • 1 teaspoon Dijon mustard
    • 1 teaspoon minced garlic
    • 1/4 teaspoon sea salt
    • 1/4 teaspoon fresh ground black pepper

    Preparation:15min  ›  Cook:15min  ›  Extra time:30min cooling  ›  Ready in:1hour 

    1. Bring water, quinoa and 1/2 teaspoon sea salt to a boil in a saucepan. Reduce heat to medium-low, cover and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Spread quinoa on a baking tray and cool, about 30 minutes.
    2. Mix quinoa, tomatoes, feta cheese, sunflower seeds, parsley, olives and shallot together in a large bowl.
    3. Dressing: Whisk olive oil, lemon juice, mustard, garlic, 1/4 teaspoon sea salt, and pepper together in a bowl.
    4. Pour over quinoa mixture and toss to coat.

    Excellent lite salad! I had some left over quinoa and wanted to use it up. This salad was perfect!! Except for the addition of the sunflower seeds because I did not have them I assembled this recipe as written from step 2. The fresh parsley is key! The dressing is very lite, the lemon adds a nice flavor. Next time I am going to add some lemon zest to bump up the flavor a bit more.
