Tomato Mint Quinoa Salad

    Quinoa and vegetables are tossed together with fresh herbs and seasonings in this creative salad. It is healthy and beautiful.

    Serves: 4 

    • 2 1/2 cups water
    • 1 1/4 cups quinoa
    • 1/3 cup raisins (or sultanas)
    • 1 pinch salt
    • 2 medium tomatoes, diced
    • 1 medium onion, minced
    • 10 radishes, quartered
    • 1/2 cucumber, diced
    • 2 tablespoons sliced almonds, toasted
    • 1/4 cup chopped fresh mint
    • 2 tablespoons chopped fresh parsley
    • 1 teaspoon ground cumin
    • 1/4 cup lime juice
    • 2 tablespoons sesame oil
    • salt, to taste

    1. Bring water to boil in a small saucepan. Pour in quinoa, raisins and a pinch of salt. Cover and let simmer for 12 to 15 minutes, then remove from heat and allow to cool to room temperature.
    2. Toss together the tomatoes, onion, radish, cucumber, and almonds in a large bowl. Stir in the cooled quinoa, then season with mint, parsley, cumin, lime juice, sesame oil and salt. Chill 1 to 2 hours before serving.

    I recently found and fell in love with quinoa and have been making all sorts of dishes with it. This one did not disappoint! I wasn't able to find tomatoes I was happy with, so I instead used grape tomatoes. I also cut the radishes into smaller chunks os that you could get more of everything in each bite. I took the salad to my dad's house for a Labor Day bbq this weekend and everybody loved it! It's really flavorful and refreshing- I wasn't sure how the mint would go with everything, but it really is a perfect blend of flavors.     I used olive oil instead of sesame oil and fresh basil instead of parsley because that's what I had. It was fantastic. I can't wait to have it again in lettuce wraps for an easy lunch.
