Plank Smoked Salmon with Seasoned Butter Sauce

Salmon is a delicate fish that does well when lightly smoked and gently seasoned. Cooking it on a plank over live fire gives it a great smokey flavour while letting it hold its shape.

Ingredients
Serves: 4
- 125g unslated butter
- 3 cloves garlic, peeled
- 3 sprigs dill
- 1 teaspoon salt, to taste
- 1 large salmon fillet
- lemon, to garnish
- additional dill, to garnish

- Preheat the smoker or oven to 125 degrees C.
- In a heat proof dish add the butter, garlic, dill and salt. Place in the BBQ and melt, yet do not boil. The longer this can infuse, the stronger the flavours, minimum of 20 minutes.
- Lay the salmon on a cooking safe plank of wood, such as untreated alder wood.
- Brush the salmon with the flavoured butter then add to the smoker or oven.
- Cook for 40 minutes, checking every 10 minutes, and basting with the butter each time. It is cooked when it gently flakes away when pulled.
- Serve garnished with lemon, dill and the remaining seasoned butter.
