Poke Cupcakes

    This is a simple way to spruce up some old cupcakes, or decorate without the onslaught of modern sugary icings and frostings.

    Ingredients
    Serves: 8 

    • 1 batch vanilla cupcakes
    • favourite jam, such as raspberry or apricot

    Directions
    Preparation:30min  ›  Cook:30min  ›  Extra time:2hours chilling  ›  Ready in:3hours 

    1. Using a skewer or chopsticks poke holes in the cupcakes to allow the jam to penetrate in.
    2. Place the jam in a bowl and microwave until warmed and liquidy. If you don't like seeds now is an opportunity to strain it.
    3. Using a brush or spoon, coat the cupcakes making sure the jam remains liquidy enough to go down the holes.

    Variation in the Outcome

    There are a lot of factors that can effect the outcome and you may want to experiment with different combinations to get the outcome you want.
    - Temperature of the cake effects how much it absorbs
    - Temperature and viscosity of the jam impacts how much is absorbed
    - Size of the poke holes
