Strawberry Jelly Poke Cake

    This is a great cake to make when you have a cake that is a bit dry or looking for something a bit different. Reminded me of eating a trifle, probably just the jelly and cake combination.

    Serves: 8 

    • 1 plain loaf cake
    • 1 packet strawberry jelly
    • 1 punnet strawberries

    1. Make the loaf cake as per the recipe's instructions.
    2. When the cake is cool use a wooden spoon handle to poke holes in it at even intervals.
    3. Clean and half the strawberries. Make the jelly and let it cool until slightly thick.
    4. Pour the jelly over the cake and into the holes, then top with the strawberries and brush with more jelly. You want to use enough jelly to fill the holes and coat the strawberries, but you may not use it up. If too much jelly is used it can loose the poke effect.
    5. Refrigerate until the jelly is set, slice to serve, aiming for the cuts to be through the poke holes to get the best visual effect.

    Variation in the Outcome

    There are a lot of factors that can effect the outcome and you may want to experiment with different combinations to get the effect you want.
    - Firm cake such as pound cake vs soft cake like a sponge cake
    - Temperature of the cake effects how much it absorbs
    - Temperature and viscosity of the jelly impacts how much is absorbed
    - Size of the poke holes
