Raw Mango Monster Smoothie

    Mango and banana are blended with kale, flax seeds, and pepitas in this fresh green smoothie perfect for a quick breakfast on the go.

    Serves: 1 

    • 1 tablespoon flax seeds
    • 2 tablespoons pepitas (raw pumpkin seeds)
    • 1 ripe mango, cubed
    • 1 frozen banana, quartered
    • 1/3 cup water, or more to taste
    • 3 ice cubes
    • 2 leaves kale, or more to taste

    1. Blend flax seeds in a blender until finely ground then add pepitas and blend until ground, about 1 minute.
    2. Place mango, banana, water, ice cubes and kale in the blender then blend until smooth, kale is fully incorporated and the smoothie is uniform in color, about 3 minutes. Thin with more water to reach desired consistency.

    Cook's Note:

    Freeze the banana the night before you want to make this smoothie.

    Healthy and delicious! I think my favorite thing about this smoothie was the hint of pepitas that comes through. The slight nutty flavor goes so well with the sweet banana-mango flavor. I made it exactly as written (using a couple handfuls of baby kale). I had to add a little extra water to get mine blending.
