Lemon Poke Cake

    A simple packet mix and lemon pudding cake is brought to a whole new level by finishing using the poke cake method with a orange glaze.

    • Cake
    • 1 package yellow cake mix
    • 1 instant lemon pudding mix
    • 4 eggs
    • 3/4 cup (180 ml) vegetable oil
    • 3/4 cup (180 ml) water
    • Glaze
    • 3 cups (360g) icing sugar
    • 3 tablespoons (45ml) water
    • 3 tablespoons (45ml) vegetable oil
    • 1/2 cup (120ml) orange juice

    1. Cake: Preheat oven to 190 degrees C. Grease and flour a 22x33cm cake tin.
    2. In a large bowl, combine cake mix, pudding mix, eggs, 3/4 cup oil and 3/4 cup water. Beat for 2 minutes at medium speed.
    3. Pour batter into the prepared cake tin. Bake in the preheated oven for 25 to 30 minutes, or until toothpick inserted into cake comes out clean.
    4. Glaze: In a medium bowl, combine icing sugar, water, oil and orange juice, then mix thoroughly.
    5. To Serve: Remove cake from oven and poke evenly with a fork every centimeter. Pour the glaze over cake while still warm, allowing it to saturate cake.

    First time making it I was at work had to share the oven so I started it on 350 but it still came out ok everybody loved it will do this again a winner moist and full of flavor. I added a little lemon extract to boost the lemon flavor wow.  -  04 Dec 2018  (Review from Allrecipes USA and Canada)
