Easy Banana Breakfast Muffins

    I have developed this recipe from Milly's Banana Cake because it's so easy. We travel a lot and having breakfast on the road means simple, healthy and yummy.

    Ingredients
    Makes: 12 muffins

    • 1 cup plain flour
    • 1/2 cup rolled oats
    • 1/2 cup raw sugar
    • 1 teaspoon bicarb soda
    • 1 teaspoon salt
    • 1/2 cup vegetable oil
    • 3 bananas (lightly mashed)
    • 2 eggs (well combined)
    • pumpkin or sunflower seeds (optional)

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat the coven to 180 degrees C.
    2. Combine flour, oats, sugar, bicarb and salt in a bowl. Add oil, bananas and eggs then mix well.
    3. Divide mixture into 12 large patty pans. Sprinkle seeds on top.
    4. Bake in the preheated oven for 20 to 25 minutes until golden brown.

    Tips

    - Banana's are best for baking when VERY ripe. - It's easily to double the mixture for 24 muffins.
