    A favourite Mexican street food, you can easily make this tasty corn on the cob at home. Perfect for a vegetarian BBQ dish, or make under the grill if the weather isn't cooperating!

    Ingredients
    Serves: 4 

    • 4 ears sweetcorn, husks removed
    • 60g butter, melted
    • 4 tablespoons mayonnaise
    • 65g grated cotija cheese (see footnote)
    • 4 lime wedges (optional)

    Directions

    1. Preheat a barbecue for medium-high heat.
    2. Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the BBQ.
    3. Remove from barbecue and roll in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge.

    Cotija

    Cotija is a hard Mexican cheese typically aged for 100 days. If you cannot find it, you can use a hard Italian cheese such as Parmesan or Pecorino. A firm feta cheese can also work well.
