Sweet Potato Cheese Scones

    This was my mothers recipe for pumpkin scones but I have changed the pumpkin to sweet potato because I had no pumpkin. I found that they were delicious and my family and friends loved them.

    Makes: 1 batch scones

    • 1 cup cooked, mashed, then slightly cooled sweet potato.
    • 1 tablespoon butter
    • 1 tablespoon white sugar
    • 1 egg
    • 2 cups self raising flour
    • pinch salt
    • 1/4 cup grated cheese
    • 1 tablespoon chives, chopped.

    1. Preheat the oven to 220 degrees C.
    2. Mix together sweet potato, butter, sugar and egg until smooth and it has no lumps.
    3. In another bowl mix flour, salt, cheese and chives
    4. Combine all the ingredients together, then mix until combined. Do not over work the dough.
    5. Flatten out to 2 1/2 cm thick, cut out with cutter and place on tray.
    6. Cook in the preheated oven for 15 minutes or until golden brown.
