Gingerbread Delicious and Moist

    Beautifully delicious and moist ginger bread. Never last long in this household.

    Serves: 12 

    • 250g plain flour
    • pinch of salt
    • 2 teaspoon ground ginger
    • 1 teaspoon mixed spice
    • 1 teaspoon bicarbonate of soda
    • 50g soft brown sugar
    • 100g butter
    • 112g black treacle
    • 112g golden syrup
    • 150ml milk
    • 2 medium eggs beaten
    • 50g sultanas, optional

    1. Preheat oven to 150 degrees C. Grease an 18cm square deep cake tin.
    2. Sieve together the flour, salt, ginger, mixed spice and bicarbonate of soda, then stir in the brown sugar.
    3. Melt butter, treacle and syrup gently. Gradually beat in milk and allow to cool.
    4. Add the beaten eggs and mix well. Stir treacle mixture into the flour and add sultanas.
    5. Pour mixture into prepared tin, and bake for about 15 minutes.
