Lemon Drizzle Friands

    I love friands, and this is one of my favourite kind. I love it so much i wanted to share it.

    Makes: 1 batch of Friands

    • Friand
    • 160g unsalted butter
    • 100g plain flour
    • 250g icing sugar
    • 125g ground almond
    • 6 egg whites
    • 1 lemon, zested
    • Drizzle
    • 50g additional icing sugar
    • 1 lemon, juiced and zested

    1. Friand: Preheat the oven to 180 degrees. Melt butter, and use a little to grease your friand tin.
    2. Sift the flour and sugar into the ground almond then combine well.
    3. Whisk your egg whites until fluffy and fold them into the flour, sugar and almond mix.
    4. Add the zest of one lemon and melted butter. Mix the ingredients together well.
    5. Fill the friand moulds to 3/4 full. Bake on middle shelf for 18-20 minutes until golden brown.
    6. When done leave to cool in the tin for 5 minutes. After 5 minutes remove from tin, and place on a cooling rack.
    7. Drizzle: Mix icing sugar and enough lemon juice to make a nice creamy lemon drizzle coating.
    8. Coat the friands then add the zest from the second lemon for garnish.
