Moqueca De Camarão (Brazilian Coconut and Prawn Stew)

    Moqueca is a typical Brazilian seafood stew, and moqueca de camarão uses prawns and coconut milk. It's quick to make and uses simple ingredients. Perfect with rice.

    Serves: 4 

    • 3 tablespoons olive oil
    • 1 onion, diced
    • 3 cloves garlic, crushed
    • 1 green capsicum, diced
    • 2 tomatoes, seeded and diced
    • 700ml coconut milk
    • 2 teaspoons annatto powder (ground achiote seeds)
    • salt and pepper, to taste
    • 500g prawns, peeled
    • chopped coriander, to taste

    1. Heat olive oil in a saucepan over medium low heat and sauté onion until soft. Add garlic and sauté for 2 minutes, then add green capsicum, tomatoes and coconut milk. Continue stirring with a spoon until milk begins to boil.
    2. When milk begins to boil, add annatto powder, seasoning and prawns. Cook until prawns are pink and cooked through, about 5 minutes (do not overcook).
    3. Remove from heat, sprinkle with chopped coriander and serve.

    Annatto Powder

    Also called achiote powder, it can be found at Asian or Latin American shops, or online. Annatto is mostly used for the vibrant colour it imparts, so in a pinch you could either omit it from the recipe or use equal parts paprika and turmeric instead.
