Zucchini, Pancetta and Gruyere Quiche

    Transform a simple quiche into something amazing just by grating the zucchini. This is the most perfect way to "camouflage" veggies onto my kids meals, and ultimately has become a family favourite.

    Serves: 8 

    • 1 sheet shortcrust pastry
    • 1 tablespoon mustard
    • 1 egg, lightly beaten
    • 100ml cream
    • 1 large zucchini, peeled and grated
    • 200g Gruyere cheese, grated
    • salt and pepper, to taste
    • 1 pinch ground nutmeg
    • 200g pancetta, sliced

    1. Preheat the oven to 180 degrees C. Grease and lightly dust with flour a 23cm quiche dish or tart tin.
    2. Roll out the pastry on a lightly floured work surface then transfer to the prepared tart tin and gently press into the base and sides. Trim any excess pastry and pinch the edges. Brush the pastry case with the mustard.
    3. In a bowl, mix the beaten egg and cream. Add grated zucchini, grated cheese reserving a tablespoon of cheese for later, then season with salt, pepper and nutmeg.
    4. Chop half of the pancetta slices and arrange the remaining slices over pastry case. Pour zucchini mixture into case and even it out. Sprinkle with pancetta and the rest of the grated cheese.
    5. Bake in preheated oven for 30 minutes, or until centre is set and is slightly golden. Remove from the oven and serve warm, or allow to cool before serving.
