Warm Sweetcorn, Capsicum and Feta Salad

    Serves: 4 

    • 3 tablespoons olive oil
    • 1 yellow onion, diced
    • 1 green capsicum, cut in strips
    • 1 tablespoon seeded and diced fresh green chilli
    • 330g frozen sweetcorn
    • 1 teaspoon caster sugar
    • 1 pinch cumin
    • salt and pepper, to taste
    • 100g feta cheese, crumbled

    1. In a medium saucepan, warm olive oil over medium heat. Add the diced onion and cook and stir until tender and translucent. Add capsicum and chilli then cook for another 5 minutes until tender.
    2. Add sweetcorn to the saucepan and season with sugar, cumin, salt and pepper. Cook for another 2 minutes, stirring frequently until the sweetcorn is hot through.
    3. Pour into a salad bowl and sprinkle with feta cheese. Serve warm.
