This is one of my favourite summer salads. Love the combination of avocados, with cherry tomatoes and tender leafy greens from the rocket. Great addition to an easy lunch or as a side dish when serving poultry.

4 bunches baby rocket
200g cherry tomatoes
1 tablespoon balsamic vinegar
3 tablespoons olive oil
salt and pepper, to taste

Salad: Place the rocket leaves in a salad bowl.
Stone the avocado and slice the flesh thinly then place over the leaves.
Sprinkle with cherry tomatoes (either whole or halved).
Dressing: In a separate bowl, whisk all ingredients. Drizzle generously over salad before serving.
