Ingredients

Salad
3 bunches fresh rocket
1 avocado, thinly sliced
2 hard boiled eggs, diced
Dressing
1 tablespoon lemon juice, freshly squeezed
3 tablepoons olive oil
salt and pepper, to taste

Salad: Place the rocket leaves in a colander and rinse well with cold water. Pat dry with a paper towel. Mix in a large salad bowl with the avocado slices and chopped hard boiled eggs.
Dressing: In a separate bowl, prepare the dressing by mixing well all ingredients with a whisk until combined.
To Serve: Drizzle dressing over salad and toss well before serving.
