Avocado, Rocket and Egg Salad

This simple yet delicious green leaf salad is a wonderful served alongside a whole variety of meat or poultry dishes.

- Salad
- 3 bunches fresh rocket
- 1 avocado, thinly sliced
- 2 hard boiled eggs, diced
- Dressing
- 1 tablespoon lemon juice, freshly squeezed
- 3 tablepoons olive oil
- salt and pepper, to taste

- Salad: Place the rocket leaves in a colander and rinse well with cold water. Pat dry with a paper towel. Mix in a large salad bowl with the avocado slices and chopped hard boiled eggs.
- Dressing: In a separate bowl, prepare the dressing by mixing well all ingredients with a whisk until combined.
- To Serve: Drizzle dressing over salad and toss well before serving.
