2 medium bunches rocket leaves
75g sundried tomatoes, thinly sliced
1 red capsicum, seeded and cut in strips
50g Parmesan cheese, shaved
5 tablespoons corn oil
3 tablespoons balsamic vinegar
salt and pepper, to taste

Salad: Wash and pat dry the rocket leaves then toss in a large salad bowl. Sprinkle sundried tomatoes and capsicum on top. Decorate with shaved Parmesan.
Dressing: In the meantime, prepare salad dressing by combining all ingredients in a small bowl and mixing well.
To Serve: Drizzle over salad and serve immediately.
