4 Ingredient Flourless Chocolate Biscuits

Delicious chocolate biscuits made with only 4 ingredients and using ground almonds instead of flour. My mother always said these biscuits looked like her father's cap which made us laugh every time. She always made them in the run up to Christmas.


Serves: 48 

  • 180g soft butter
  • 210g icing sugar
  • 200g ground almonds
  • 200g grated dark chocolate

  1. Place butter into a bowl and sift over icing sugar. Beat with a hand mixer for about 3 minutes, until mixture is creamy.
  2. Stir in ground almonds and grated chocolate then mix well to get a uniform colour.
  3. Form the mixture into 3cm thick logs, wrap with plastic wrap. Chill the logs in the fridge for at least 1 hour.
  4. Preheat oven to 160 degrees C. Line 2 baking trays with baking paper.
  5. Slice the chocolate logs in 1cm thick slices then roll into small balls and place on prepared baking trays. You should have about 48 biscuits. It is important, that the dough is cold, before you put the tin in the oven. You can either pre-chill the baking tin or set the tin with the unbaked biscuits into the fridge for a while before baking. The colder, the better.
  6. Bake the biscuits for about 15 minutes in the preheated oven. Test one biscuit (after it cools slightly) by pressing the base with your thumb. The biscuits are cooked if the bottom breaks in easily and crumbles.
  7. Remove the biscuits and let cool completely on a wire rack before placing them in an airtight container or cookie jar.
